ALL ANIMALS ARE PROCESSED IN A USDA INSPECTED FACILITy. Dry AGED FOR 7-10 DAYS BEFORE being cut. VACUUM SEALED AND FROZEN.
wholes, halves, & quarters
If you prefer to buy beef or lamb in bulk, we will happily accommodate you with a whole, half, or quarter. Whether you have bought bulk before or are new to the experience, we are here to help and tailor the meat order to your liking.
We offer bulk beef throughout the year, as well as bulk lamb from fall to early spring. Pricing is based on the hanging weight of the animal and since this includes everything from ground to more expensive cuts, one price simplifies the buying process and works out favorably compared to buying individual retail cuts.
If want more information, drop by the ZZ Mercantile, give us a call or send us an email. You can always check out our price list for retail cuts and packs if you aren't ready to jump into a bulk order.
This might help if you know...
Live Weight: An average grass-fed two-year old steer weighs about 1200 lbs; an average grass-fed 10-month old lamb weighs about 110 lbs.
Hanging Weight: Animal with skin, head, non-usable organs, and hooves removed.
Retail Weight: Meat yielded as animal is fabricated into individual retail cuts, amount of meat you will receive.
We use Windham Butcher Shop for beef and lamb. We have been very happy with how they handle the animals throughout processing and fabrication.
Bulk lamb orders are available from the beginning of fall into early spring. If you are interested in lamb cuts during the late spring and summer, check out our price list!
